Ingredients:
– 1 pound (450g) chicken breast, minced or finely chopped
– 1/3 cup (80ml) mayonnaise or Greek yogurt
– 2 large eggs
– 1/4 cup (30g) flour or breadcrumbs
– 1/4 cup (30g) grated Parmesan cheese
– 1/2 cup (50g) shredded mozzarella cheese
– 2 tablespoons fresh chives, chopped (or green onions)
– 2 tablespoons fresh parsley, chopped
– 2 cloves garlic, minced
– Salt and pepper to taste
– 1 tablespoon olive oil (for frying)
– Lemon wedges (for serving)
– Ketchup or your favorite dipping sauce (optional, for serving)

Instructions:
1. **Prepare the Chicken Mixture:**
– In a large mixing bowl, combine the minced or finely chopped chicken with mayonnaise or Greek yogurt.
– Add the eggs, flour or breadcrumbs, Parmesan cheese, mozzarella cheese, chopped chives, parsley, minced garlic, salt, and pepper. Mix everything together until well combined. The mixture should be sticky but hold together when shaped into patties.
2. **Shape the Fritters:**
– Using your hands, shape the chicken mixture into small patties or fritters, about 2-3 inches in diameter. You should be able to make around 10-12 fritters.
3. **Fry the Fritters:**
– Heat the olive oil in a large skillet over medium heat. Once hot, carefully add the fritters to the skillet, making sure not to overcrowd the pan.
– Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and cooked through. You may need to cook them in batches depending on the size of your skillet.
4. **Serve:**
– Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.
– Serve the chicken fritters warm, with lemon wedges on the side for squeezing over the top, and with ketchup or your favorite dipping sauce if desired.
