Instructions
1. **Cook the Chicken:**
– Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned on all sides. Remove the chicken from the pot and set aside.
2. **Prepare the Vegetables:**
– In the same pot, add the diced onion and carrots. Cook until the vegetables are softened, about 5 minutes. Add the minced garlic and cook for another minute.
3. **Make the Sauce:**
– Sprinkle the flour over the vegetables and stir to coat. Gradually add the chicken broth, stirring constantly to avoid lumps.
– Add the milk or heavy cream, dried thyme, and dried parsley. Bring the mixture to a simmer and cook until it starts to thicken.
– Return the cooked chicken to the pot. If using, add the frozen peas. Simmer for another 5 minutes.
4. **Prepare the Dumplings:**
– In a large bowl, whisk together the flour, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
– Add the milk and stir until just combined.
