Chicken and Broccoli Patties

Ingredients:

  • 2 cups broccoli florets, steamed and finely chopped
  • 1 lb (450g) boneless, skinless chicken breast, minced or ground
  • 1/2 cup breadcrumbs (or almond flour for a low-carb option)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1/2 teaspoon onion powder
  • 1 tablespoon fresh parsley, chopped (optional)
  • Olive oil or cooking spray, for frying

Instructions:

  1. Prepare the Ingredients:
    • If using whole chicken breasts, mince or grind them in a food processor until fine.
    • Steam the broccoli florets for a few minutes until tender, then finely chop them.
  2. Make the Patty Mixture:
    • In a large mixing bowl, combine the minced chicken, chopped broccoli, breadcrumbs, Parmesan cheese, egg, garlic, salt, pepper, and onion powder.
    • Mix well until all the ingredients are evenly combined. If the mixture feels too wet, add a bit more breadcrumbs.
  3. Shape the Patties:
    • Scoop about 2 tablespoons of the mixture and shape it into a patty. Repeat with the remaining mixture.
  4. Cook the Patties:
    • Heat a non-stick skillet over medium heat and add a little olive oil or spray with cooking spray.
    • Place the patties in the skillet and cook for 4-5 minutes on each side, or until golden brown and cooked through.
  5. Serve:
    • Serve the chicken and broccoli patties warm. They pair well with a dipping sauce or a side salad.
