Chicken and Broccoli Patties

Ingredients:
- 2 cups broccoli florets, steamed and finely chopped
- 1 lb (450g) boneless, skinless chicken breast, minced or ground
- 1/2 cup breadcrumbs (or almond flour for a low-carb option)
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- Salt and black pepper, to taste
- 1/2 teaspoon onion powder
- 1 tablespoon fresh parsley, chopped (optional)
- Olive oil or cooking spray, for frying
Instructions:
- Prepare the Ingredients:
- If using whole chicken breasts, mince or grind them in a food processor until fine.
- Steam the broccoli florets for a few minutes until tender, then finely chop them.
- Make the Patty Mixture:
- In a large mixing bowl, combine the minced chicken, chopped broccoli, breadcrumbs, Parmesan cheese, egg, garlic, salt, pepper, and onion powder.
- Mix well until all the ingredients are evenly combined. If the mixture feels too wet, add a bit more breadcrumbs.
- Shape the Patties:
- Scoop about 2 tablespoons of the mixture and shape it into a patty. Repeat with the remaining mixture.
- Cook the Patties:
- Heat a non-stick skillet over medium heat and add a little olive oil or spray with cooking spray.
- Place the patties in the skillet and cook for 4-5 minutes on each side, or until golden brown and cooked through.
- Serve:
- Serve the chicken and broccoli patties warm. They pair well with a dipping sauce or a side salad.
