Chicken and Broccoli Alfredo Lasagna Roll-Ups

Ingredients:
For the Filling:
- 8-10 lasagna noodles, cooked and drained
- 2 cups cooked chicken, shredded or diced
- 1 1/2 cups broccoli florets, steamed
- 2 cups ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups shredded mozzarella cheese (for topping)
For the Alfredo Sauce:
- 1/4 cup butter
- 3 cloves garlic, minced
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Cook the Lasagna Noodles:
- Bring a large pot of salted water to a boil and cook the lasagna noodles according to the package instructions until al dente. Drain and set aside, laying the noodles flat on a baking sheet to prevent them from sticking.
- Prepare the Alfredo Sauce:
- In a saucepan over medium heat, melt the butter.
- Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in the heavy cream and bring the mixture to a simmer.
- Gradually whisk in the Parmesan cheese until melted and the sauce thickens (about 3-5 minutes).
- Season with salt and pepper to taste, and remove from heat.
- Make the Filling:
- In a mixing bowl, combine the cooked chicken, steamed broccoli, ricotta cheese, Parmesan cheese, garlic powder, salt, and pepper. Mix until well combined.
- Assemble the Roll-Ups:
- Preheat your oven to 375°F (190°C).
- Spread a thin layer of Alfredo sauce on the bottom of a greased baking dish.
- Lay a cooked lasagna noodle flat and spread a portion of the chicken and broccoli mixture evenly over the noodle.
- Roll up the lasagna noodle and place it seam-side down in the prepared baking dish.
- Repeat with the remaining noodles and filling.
- Top with Sauce and Cheese:
- Pour the remaining Alfredo sauce over the lasagna roll-ups, ensuring they are well covered.
- Sprinkle shredded mozzarella cheese evenly over the top.
- Bake:
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and golden brown.
- Serve:
- Garnish with fresh parsley if desired, and serve the lasagna roll-ups hot.
Variations:
- You can use spinach instead of broccoli, or add mushrooms for more vegetables.
- Feel free to substitute store-bought Alfredo sauce for homemade if you’re short on time.
