Ingredients:

  • 1 lb ground beef
  • 1 cup diced onions
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cloves garlic, minced
  • 3 cups chicken or beef broth
  • 2 cups diced potatoes (peeled or unpeeled, based on preference)
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream or milk
  • 1/4 cup all-purpose flour
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • 1 teaspoon paprika
  • Optional: diced pickles or tomatoes for garnish

Instructions:

  1. Cook the Ground Beef:
    • In a large pot, cook the ground beef over medium heat until browned. Season with salt and pepper. Drain the excess grease and set the beef aside.
  2. Sauté the Vegetables:
    • In the same pot, melt the butter and add onions, carrots, celery, and garlic. Cook over medium heat until the vegetables are tender, about 5-7 minutes.
  3. Thicken the Soup:
    • Sprinkle the flour over the vegetables and stir to coat. Cook for a couple of minutes to remove the raw flour taste.
  4. Add Liquids:
    • Gradually add the broth, stirring continuously to mix the flour evenly with the broth and prevent lumps. Add the diced potatoes and bring the soup to a boil.
  5. Simmer:
    • Reduce the heat to a simmer and let cook until the potatoes are tender, about 10-15 minutes.
  6. Add Cheese and Cream:
    • Lower the heat and stir in the cream or milk. Then, gradually add the shredded cheese, stirring until the cheese is melted and the soup is creamy.
  7. Final Seasoning:
    • Add the cooked ground beef back into the pot. Season with paprika, and additional salt and pepper to taste. Let the soup warm through.
  8. Serve:
    • Serve the soup hot, garnished with additional cheese, and optional diced tomatoes or pickles if desired.
