Cheeseburger Soup Recipe
Ingredients:
- 1 lb ground beef
- 1 cup diced onions
- 1 cup diced carrots
- 1 cup diced celery
- 2 cloves garlic, minced
- 3 cups chicken or beef broth
- 2 cups diced potatoes (peeled or unpeeled, based on preference)
- 2 cups shredded cheddar cheese
- 1 cup heavy cream or milk
- 1/4 cup all-purpose flour
- 2 tablespoons butter
- Salt and pepper, to taste
- 1 teaspoon paprika
- Optional: diced pickles or tomatoes for garnish
Instructions:
- Cook the Ground Beef:
- In a large pot, cook the ground beef over medium heat until browned. Season with salt and pepper. Drain the excess grease and set the beef aside.
- Sauté the Vegetables:
- In the same pot, melt the butter and add onions, carrots, celery, and garlic. Cook over medium heat until the vegetables are tender, about 5-7 minutes.
- Thicken the Soup:
- Sprinkle the flour over the vegetables and stir to coat. Cook for a couple of minutes to remove the raw flour taste.
- Add Liquids:
- Gradually add the broth, stirring continuously to mix the flour evenly with the broth and prevent lumps. Add the diced potatoes and bring the soup to a boil.
- Simmer:
- Reduce the heat to a simmer and let cook until the potatoes are tender, about 10-15 minutes.
- Add Cheese and Cream:
- Lower the heat and stir in the cream or milk. Then, gradually add the shredded cheese, stirring until the cheese is melted and the soup is creamy.
- Final Seasoning:
- Add the cooked ground beef back into the pot. Season with paprika, and additional salt and pepper to taste. Let the soup warm through.
- Serve:
- Serve the soup hot, garnished with additional cheese, and optional diced tomatoes or pickles if desired.
