– 4-6 pieces of chicken (drumsticks, thighs, or breasts)
– 2 cups buttermilk
– 2 cups all-purpose flour
– 1 tablespoon paprika
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon cayenne pepper
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– Vegetable oil, for frying

Instructions:

 

1. **Marinate the Chicken:**
– Place the chicken pieces in a large bowl or zip-top bag and pour the buttermilk over them, ensuring they are well coated.
– Cover and refrigerate for at least 1 hour, or preferably overnight, to tenderize the chicken and enhance flavor.

2. **Prepare the Coating:**
– In a shallow dish or large bowl, combine the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
– Mix well to evenly distribute the spices.

3. **Coat the Chicken:**
– Remove the chicken from the buttermilk, allowing any excess to drip off.
– Dredge each piece of chicken in the seasoned flour mixture, pressing lightly to ensure a good coating. Shake off any excess flour.

4. **Fry the Chicken:**
– Heat about 1 inch of vegetable oil in a large, heavy skillet or Dutch oven over medium-high heat until it reaches 350°F (175°C).
– Carefully add the chicken pieces to the hot oil, skin side down, without overcrowding the pan.
– Fry the chicken for about 10-12 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 75°C).

5. **Drain and Serve:**
– Remove the chicken from the oil and place it on a wire rack or paper towels to drain excess oil.
