Ingredients:

  • 400 grams (about 14 ounces) spaghetti or your favorite pasta
  • 2 cups broccoli florets
  • 2 Italian sausages, sliced into rounds
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 cup chicken broth or vegetable broth
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about a cup of the pasta water.
  2. Blanch the Broccoli:
    • In the same pot of boiling water, blanch the broccoli florets for about 2-3 minutes until they are bright green and slightly tender. Remove with a slotted spoon and set aside.
  3. Cook the Sausage:
    • In a large skillet over medium heat, add a splash of olive oil and the sliced sausages. Cook until browned and cooked through. Remove from the skillet and set aside.
  4. Sauté Garlic:
    • In the same skillet, add a bit more olive oil if needed and sauté the minced garlic for about 1 minute until fragrant but not browned.
  5. Combine Ingredients:
    • Add the cooked pasta, blanched broccoli, and cooked sausage back into the skillet. Pour in the chicken or vegetable broth and toss everything together. Cook for an additional 2 minutes to let the flavors meld. If the mixture seems dry, add a bit of the reserved pasta water to achieve your desired sauce consistency.
  6. Add Cheese and Season:
    • Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
  7. Serve:
    • Plate the pasta and sprinkle with more Parmesan cheese and chopped parsley for garnish.
