Ingredients:

  • For the Base:
    • 2 cups cornstarch
    • 1 cup all-purpose flour
    • 1 cup sugar
    • 1/2 cup unsalted butter, softened
    • 1 teaspoon baking powder
    • 2 eggs
  • For the Custard:
    • 4 cups milk
    • 1 cup sugar
    • 1/2 cup cornstarch
    • 2 tablespoons unsalted butter
    • 1 teaspoon vanilla extract
  • For the Topping:
    • 1 cup coconut milk
    • 2 tablespoons sugar
    • 1/4 cup shredded coconut
    • Food coloring (optional, for the orange color)

Instructions:

  1. Prepare the Base:
    • Preheat your oven to 350°F (175°C).
    • In a large bowl, mix cornstarch, flour, sugar, baking powder, and butter until crumbly.
    • Add eggs and mix until a smooth dough forms.
    • Press this dough into a greased baking dish, creating a flat, even layer.
  2. Make the Custard:
    • In a saucepan, mix milk, sugar, and cornstarch. Cook over medium heat, stirring constantly until the mixture thickens.
    • Remove from heat, stir in butter and vanilla extract.
    • Pour the custard over the base layer in the baking dish.
  3. Prepare the Topping:
    • In a small saucepan, combine coconut milk and sugar. If using, add food coloring to achieve the desired color.
    • Bring to a boil and then simmer until slightly thickened.
    • Stir in shredded coconut.
  4. Bake:
    • Pour the topping over the custard layer.
    • Bake in the preheated oven for 30-35 minutes or until the top is set and golden.
  5. Cool and Serve:
    • Let the cake cool completely in the dish.
    • Once cool, refrigerate for a few hours to set completely before cutting into squares and serving.
