Beef Enchiladas Recipe
Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 cups enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup pico de gallo
- Fresh cilantro, chopped, for garnish
Instructions:
- Preheat the oven to 375°F (190°C).
- Cook the beef: In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Sauté the vegetables: In the same skillet, add the onion and garlic, and cook until softened. Return the beef to the skillet. Stir in cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes.
- Assemble the enchiladas: Pour about 1/2 cup of enchilada sauce in the bottom of a baking dish. Dip each tortilla in the remaining enchilada sauce, then spoon the beef mixture down the center of each tortilla. Sprinkle with some of the cheddar and Monterey Jack cheeses. Roll up and place seam side down in the baking dish.
- Top and bake: Pour the remaining enchilada sauce over the rolled enchiladas and sprinkle with the remaining cheese. Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and slightly golden.
- Garnish and serve: Top with pico de gallo and chopped cilantro before serving.
