Beef and Cheese Chimichanga
Ingredients
or 1 pound ground beef
or 1 can (16 ounces) refried beans
or 1/2 cup finely chopped onion

or 3 cans (8 ounces each) tomato sauce, divided
or 2 teaspoons chili powder
or 1 teaspoon minced garlic
or 1/2 teaspoon ground cumin
or 12 (10 inch) flour tortillas, warm.

or 1 can (4 ounces) chopped green chiles.
or 1 can (4 ounces) chopped jalapeno peppers.
or oil for frying.
or 1-1/2 cups shredded cheddar cheese.How to Make Beef and Cheese Chimichanga
In a large skillet, cook beef over medium heat until no longer pink; flow away. Add beans, onions, 1/2 cup tomato sauce, chili powder, garlic and cumin.

Place about 1/3 cup meat mixture off-center on each tortilla. Fold the edge closest to the filling up and over to cover. Fold and roll on both sides.Secure with toothpicks. In a large pot, combine chiles, peppers, and remaining tomato sauce. heat through.
In an electric skillet or deep fryer, heat 1 inch of oil to 375°. Fry chimichangas for 1 1/2 to 2 minutes on each side, until golden brown.Drain on paper towels. Sprinkle with cheese. Serve with sauce
