Battered and Fried Fish Fillets
Ingredients:
– 1 pound white fish fillets (such as cod, haddock, or tilapia)
– Salt and pepper, to taste
– 1 cup all-purpose flour
– 1 teaspoon baking powder
– 1 teaspoon salt
– 1 cup cold sparkling water or beer
– Vegetable oil, for frying

Instructions:
1. **Prepare the Fish:**
– Pat the fish fillets dry with paper towels and season both sides with salt and pepper.

– In a medium bowl, whisk together the flour, baking powder, and salt.
