Banana Pancake Wedges Recipe
Ingredients:
- 2 ripe bananas, sliced
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 1/4 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
- 1 tablespoon butter or oil (for frying)
- Powdered sugar or honey (optional, for serving)
Instructions:
- Prepare the Batter:
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk the egg, milk, and vanilla extract.
- Gradually pour the wet ingredients into the dry ingredients, stirring until you get a smooth batter.
- Prepare the Bananas:
- Heat a non-stick skillet or pan over medium heat and melt the butter.
- Sprinkle a little sugar over the bottom of the pan and add the banana slices in a single layer.
- Pour the Batter:
- Once the bananas start to caramelize slightly, pour the prepared batter over the bananas, covering them evenly.
- Cook the Pancake:
- Let the pancake cook on medium heat for 3-4 minutes or until the bottom is golden brown and the top is set.
- Flip the pancake or, if it’s too thick, you can also cover the pan with a lid and let it cook through without flipping for another 3-4 minutes.
- Cut and Serve:
- Once cooked, remove the pancake from the pan and let it cool slightly.
- Cut into wedges and serve warm.
- Optional Topping:
- You can dust the wedges with powdered sugar, drizzle with honey, or add whipped cream for extra sweetness.
