Make sure your pigs are at room temperature. Leave the
AF on for 20 minutes (this dries out the skin).
Place the meat in the cube mold and leave your favorite dish.
I prepared the following mixture:
ground coriander, ground cinnamon, ground cumin, Chinese 5-spice, brown sugar, salt and pepper.
Open the shell and score it, I made mine in a diamond shape.
Polish with white vinegar, generously use neutral oil of choice, and season with salt.
Make a rough basin so that the meat can sit well on the skin.
Set it to 200 degrees Celsius or 400 Fahrenheit on AF for 25 minutes and reduce the temperature to 180 degrees Celsius or 350 Fahrenheit in 20 minutes.
