Ingredients:
For the Dumplings:

2 large apples (Granny Smith or Honeycrisp work well)
1 package refrigerated pie crusts (or homemade pie crust)
1/4 cup granulated sugar
1 teaspoon cinnamon
1 tablespoon lemon juice
1 tablespoon unsalted butter, cut into small pieces
1 egg (for egg wash)
For the Sauce:

1 cup apple juice or cider
1/2 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon vanilla extract

Instructions:


1. Prepare the Apples:

Preheat the oven to 375°F (190°C).
Peel and core the apples. Cut a small slice from the bottom of each apple so they sit flat.
In a bowl, mix the granulated sugar, cinnamon, and lemon juice. Fill each apple with this mixture and top with a small piece of butter.
2. Make the Dumplings:

Roll out the pie crusts on a floured surface. Cut each crust into 4 squares.
Place one apple in the center of each square. Bring the corners of the dough up around the apple, sealing it well to prevent any filling from escaping. You can use a bit of water to help seal the edges.
Place the wrapped apples in a greased baking dish.
3. Prepare the Sauce:

In a saucepan over medium heat, combine the apple juice, brown sugar, cinnamon, nutmeg, and vanilla extract. Stir until the sugar is dissolved and the mixture is slightly thickened.
Pour the sauce over the dumplings in the baking dish.
4. Bake:

Beat the egg and brush it over the dumplings for a nice golden finish.
Bake in the preheated oven for 30-35 minutes, or until the dumplings are golden brown and the apples are tender.
5. Serve:

Let the dumplings cool slightly before serving. They can be enjoyed warm on their own or with a scoop of vanilla ice cream for an extra treat!
Tips:
For added flavor, sprinkle some chopped nuts or raisins inside the apples before sealing them.
Serve with a drizzle of the warm sauce from the baking dish for an extra touch.
