Cinnamon Roll Muffins with Cream Cheese Filling Recipe

 

 

 

 

Ingredients:

  • For the Muffins:
    • 2 cups all-purpose flour
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1/2 cup sugar
    • 1 egg, beaten
    • 1 cup milk
    • 1/4 cup vegetable oil
  • For the Cream Cheese Filling:
    • 4 ounces cream cheese, softened
    • 1/4 cup sugar
    • 1 teaspoon vanilla extract
  • For the Cinnamon Sugar Topping:
    • 1/4 cup sugar
    • 1 tablespoon ground cinnamon
    • 2 tablespoons butter, melted

Instructions:

  1. Preheat Oven and Prepare Muffin Pan:
    • Preheat your oven to 375 degrees F (190 degrees C).
    • Grease or line a 12-cup muffin tin with paper liners.
  2. Make Muffin Batter:
    • In a large bowl, whisk together flour, baking powder, salt, and sugar.
    • In another bowl, mix the beaten egg, milk, and vegetable oil.
    • Combine the wet ingredients with the dry ingredients, stirring until just mixed (do not overmix).
  3. Prepare Cream Cheese Filling:
    • In a small bowl, beat together the cream cheese, sugar, and vanilla extract until smooth.
  4. Assemble Muffins:
    • Fill each muffin cup about 1/3 full with batter.
    • Add a spoonful of the cream cheese filling to the center of each.
    • Top with enough batter to fill the muffin cups about 3/4 full.
  5. Add Cinnamon Sugar Topping:
    • Mix sugar and cinnamon in a small bowl.
    • Brush the top of each muffin with melted butter, then sprinkle generously with the cinnamon sugar mixture.
  6. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the muffin comes out clean.
  7. Cool and Serve:
    • Allow the muffins to cool in the pan for 5 minutes, then remove to a wire rack to cool completely.
