Cinnamon Roll Muffins with Cream Cheese Filling Recipe
Ingredients:
- For the Muffins:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1 egg, beaten
- 1 cup milk
- 1/4 cup vegetable oil
- For the Cream Cheese Filling:
- 4 ounces cream cheese, softened
- 1/4 cup sugar
- 1 teaspoon vanilla extract

- 1/4 cup sugar

Instructions:
- Preheat Oven and Prepare Muffin Pan:
- Preheat your oven to 375 degrees F (190 degrees C).
- Grease or line a 12-cup muffin tin with paper liners.
- Make Muffin Batter:
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In another bowl, mix the beaten egg, milk, and vegetable oil.
- Combine the wet ingredients with the dry ingredients, stirring until just mixed (do not overmix).
- Prepare Cream Cheese Filling:
- In a small bowl, beat together the cream cheese, sugar, and vanilla extract until smooth.
- Assemble Muffins:
- Fill each muffin cup about 1/3 full with batter.
- Add a spoonful of the cream cheese filling to the center of each.
- Top with enough batter to fill the muffin cups about 3/4 full.
- Add Cinnamon Sugar Topping:
- Mix sugar and cinnamon in a small bowl.
- Brush the top of each muffin with melted butter, then sprinkle generously with the cinnamon sugar mixture.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the muffin comes out clean.
- Cool and Serve:
- Allow the muffins to cool in the pan for 5 minutes, then remove to a wire rack to cool completely.
