Ingredients:

  • 1 cup sweetened condensed milk
  • 2 cups powdered sugar
  • 3 cups desiccated coconut
  • 1 teaspoon vanilla extract
  • Cherry preserves or cherry pie filling
  • Extra desiccated coconut for coating
  • Optional: melted white chocolate for dipping

Instructions:

  1. Prepare the Coconut Mixture:
    • In a large bowl, mix the condensed milk, powdered sugar, desiccated coconut, and vanilla extract until well combined. The mixture should be sticky but firm enough to shape.
  2. Form the Balls:
    • Take a small amount of the coconut mixture and flatten it into a disc in your palm.
    • Place a small teaspoon of cherry preserves in the center.
    • Carefully wrap the coconut mixture around the cherry preserves, sealing it well, and roll it into a ball.
  3. Coat the Balls:
    • Roll each ball in desiccated coconut, ensuring it is fully covered.
  4. Optional Chocolate Dipping:
    • If desired, dip each ball in melted white chocolate before rolling in coconut. Allow to set on parchment paper.
  5. Chill:
    • Place the coconut balls on a baking sheet lined with parchment paper and refrigerate for at least 1 hour to firm up.
  6. Serve:
    • Once chilled and firm, the coconut balls are ready to be served.
