“Elegant White Chocolate Raspberry Cheesecake

 

 

Ingredients:

  • For the Crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup sugar
    • 1/2 cup unsalted butter, melted
  • For the Filling:
    • 3 (8 ounce) packages cream cheese, softened
    • 1 cup sugar
    • 3 large eggs
    • 1 cup white chocolate, melted and cooled
    • 1 teaspoon vanilla extract
  • For the Topping:
    • 1 cup sour cream
    • 2 tablespoons sugar
    • 1 teaspoon vanilla extract
    • Fresh raspberries and blackberries for garnish
    • White chocolate curls (optional)

Instructions:

  1. Prepare the Crust:
    • Mix graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined.
    • Press the mixture into the bottom of a 9-inch springform pan. Set aside.
  2. Make the Filling:
    • In a large bowl, beat the cream cheese with 1 cup sugar until smooth.
    • Add eggs one at a time, mixing well after each addition.
    • Blend in the melted white chocolate and 1 teaspoon vanilla.
    • Pour the cream cheese mixture over the crust in the springform pan.
  3. Bake:
    • Preheat the oven to 325°F (163°C).
    • Bake the cheesecake for 50-55 minutes, or until the center is set and the top appears dull.
  4. Prepare the Topping:
    • In a small bowl, mix sour cream, 2 tablespoons sugar, and 1 teaspoon vanilla.
    • Spread the topping over the hot cheesecake right after it comes out of the oven.
  5. Cool and Chill:
    • Allow the cheesecake to cool on a wire rack for 1 hour.
    • Refrigerate for at least 4 hours, or overnight, which is ideal.
  6. Decorate:
    • Before serving, arrange fresh raspberries and blackberries on top.
    • Add white chocolate curls for an extra touch of elegance.
  7. Serve:
    • Release the cake from the springform pan and transfer to a serving plate.
