“Elegant White Chocolate Raspberry Cheesecake
Ingredients:
- For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted

- 3 large eggs

Instructions:
- Prepare the Crust:
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined.
- Press the mixture into the bottom of a 9-inch springform pan. Set aside.
- Make the Filling:
- In a large bowl, beat the cream cheese with 1 cup sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Blend in the melted white chocolate and 1 teaspoon vanilla.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake:
- Preheat the oven to 325°F (163°C).
- Bake the cheesecake for 50-55 minutes, or until the center is set and the top appears dull.
- Prepare the Topping:
- In a small bowl, mix sour cream, 2 tablespoons sugar, and 1 teaspoon vanilla.
- Spread the topping over the hot cheesecake right after it comes out of the oven.
- Cool and Chill:
- Allow the cheesecake to cool on a wire rack for 1 hour.
- Refrigerate for at least 4 hours, or overnight, which is ideal.
- Decorate:
- Before serving, arrange fresh raspberries and blackberries on top.

- Serve:
