“Strawberry Coconut Dream Roll”

 

 

Ingredients:

  • For the Sponge:
    • 4 large eggs
    • 2/3 cup granulated sugar
    • 1 teaspoon vanilla extract
    • 1 cup all-purpose flour, sifted
    • 1 teaspoon baking powder
    • Pinch of salt
    • Red food coloring (optional for vibrant color)
  • For the Filling:
    • 1 cup heavy cream
    • 1/4 cup powdered sugar
    • 1/2 teaspoon vanilla extract
    • 1/2 cup strawberry jam
  • For the Topping:
    • 1/2 cup shredded coconut
    • Melted white chocolate for drizzling
    • Fresh strawberries for decoration

Instructions:

  1. Prepare the Sponge:
    • Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper and lightly grease it.
    • In a large bowl, whisk the eggs and granulated sugar until pale and fluffy. Add vanilla extract and red food coloring (if using) and mix until combined.
    • Gently fold in the sifted flour, baking powder, and salt until just combined. Be careful not to deflate the mixture.
    • Spread the batter evenly onto the prepared pan.
    • Bake for 10-12 minutes, or until the sponge springs back when touched.
  2. Roll the Sponge:
    • Immediately after removing from the oven, lift the sponge (with the parchment) onto a clean kitchen towel. Roll the sponge along the long edge, using the towel as a guide. Cool completely on a wire rack.
  3. Prepare the Filling:
    • Whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
    • Carefully unroll the cooled sponge. Spread the strawberry jam over the sponge, then spread the whipped cream over the jam.
    • Re-roll the sponge without the towel, enclosing the filling.
  4. Decorate the Roll:
    • Spread the outer surface with a thin layer of leftover whipped cream or a simple glaze of your choice.
    • Press shredded coconut onto the surface.
    • Drizzle with melted white chocolate and garnish with fresh strawberries.
  5. Chill:
    • Chill the roll in the refrigerator for at least an hour before slicing to allow it to set.
  6. Serve:
    • Slice the roll and serve chilled.
