Grilled Chicken with Mango Avocado Salsa and Rice

 

 

 

Ingredients:

For the Chicken Marinade:

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 garlic cloves, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh cilantro, chopped

For the Mango Avocado Salsa:

  • 1 ripe mango, diced
  • 1 ripe avocado, diced
  • 1/2 red onion, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 1 small cucumber, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional, for heat)
  • Juice of 1 lime
  • Salt and pepper to taste

For Serving:

  • 2 cups cooked white or brown rice
  • Lime wedges (for garnish)
  • Fresh cilantro (for garnish)

Instructions:

  1. Marinate the Chicken:
    • In a bowl, combine olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, pepper, and chopped cilantro. Add the chicken breasts and toss to coat them evenly in the marinade.
    • Cover and marinate the chicken for at least 30 minutes, or up to 2 hours in the refrigerator.
  2. Make the Mango Avocado Salsa:
    • In a separate bowl, combine the diced mango, avocado, red onion, red bell pepper, cucumber, cilantro, and jalapeño (if using).
    • Squeeze fresh lime juice over the salsa and season with salt and pepper. Gently toss everything together. Set aside.
  3. Grill the Chicken:
    • Preheat your grill or grill pan over medium-high heat.
    • Remove the chicken from the marinade and grill for about 5–7 minutes on each side, or until fully cooked (internal temperature should reach 165°F / 75°C).
    • Remove the chicken from the grill and let it rest for a few minutes before slicing.
  4. Assemble the Bowls:
    • Divide the cooked rice into bowls.
    • Slice the grilled chicken and arrange it on top of the rice.
    • Spoon the mango avocado salsa over the chicken.
    • Garnish with lime wedges and fresh cilantro.
