Ingredients:

For the Lasagna Roll-Ups:

  • 10 lasagna noodles, cooked according to package instructions
  • 1 lb ground beef or ground turkey
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 cups ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups shredded mozzarella cheese
  • 2 cups marinara sauce (store-bought or homemade)
  • Fresh parsley or basil, chopped (for garnish)

Instructions:

  1. Prepare the Filling:
    • In a skillet over medium heat, brown the ground beef or turkey with the diced onion until fully cooked. Drain any excess fat.
    • Add the minced garlic and cook for 1-2 minutes until fragrant. Season with salt, pepper, and Italian seasoning.
    • Remove the meat mixture from heat and set aside to cool slightly.
  2. Make the Ricotta Mixture:
    • In a large bowl, combine the ricotta cheese, grated Parmesan, egg, salt, pepper, and half of the shredded mozzarella. Stir until well combined.
  3. Assemble the Roll-Ups:
    • Preheat your oven to 375°F (190°C).
    • Lay the cooked lasagna noodles flat on a clean surface.
    • Spread a thin layer of the ricotta mixture evenly over each noodle.
    • Top the ricotta layer with a spoonful of the meat mixture.
    • Gently roll up each lasagna noodle from one end to the other and place seam-side down in a greased baking dish.
  4. Add Sauce and Cheese:
    • Pour 1 cup of marinara sauce into the bottom of the baking dish, spreading it evenly.
    • Place the lasagna roll-ups in the dish.
    • Top each roll-up with the remaining marinara sauce.
    • Sprinkle the remaining shredded mozzarella cheese over the top.
  5. Bake:
    • Cover the dish with aluminum foil and bake for 25-30 minutes.
    • Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Garnish with freshly chopped parsley or basil.
    • Serve hot and enjoy!
