Ingredients:

For the Tart Crust:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup cold unsalted butter, cubed
  • 1 egg yolk
  • 1-2 tablespoons cold water (as needed)

For the Filling:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup almond flour (or ground almonds)
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 cup milk
  • 1/2 cup raisins
  • 1/2 cup sliced almonds

For Topping:

  • Extra raisins and sliced almonds
  • 1 egg yolk (for brushing)

Instructions:

  1. Prepare the Tart Crust:
    • In a large mixing bowl, combine the flour and powdered sugar. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    • Add the egg yolk and 1 tablespoon of cold water. Mix until the dough comes together. If necessary, add another tablespoon of cold water.
    • Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  2. Make the Filling:
    • In a bowl, cream together the softened butter and sugar until light and fluffy.
    • Beat in the eggs one at a time, then add the vanilla extract.
    • Fold in the almond flour, all-purpose flour, baking powder, and milk until smooth.
    • Gently fold in the raisins and sliced almonds.
  3. Assemble the Mini Tarts:
    • Preheat your oven to 350°F (175°C) and grease mini tart pans or use disposable tart molds.
    • Roll out the chilled dough and cut out small circles to fit into the tart pans. Press the dough evenly into the molds.
    • Spoon the almond filling into each tart shell, filling them about 3/4 full.
    • Top each tart with a few extra raisins and sliced almonds.
  4. Egg Wash:
    • Brush the edges of the tarts with the egg yolk to give them a golden finish when baked.
  5. Bake:
    • Place the tarts in the preheated oven and bake for about 18-20 minutes, or until the tops are golden and the filling is set.
  6. Cool and Serve:
    • Allow the tarts to cool in the pans for a few minutes before transferring them to a wire rack to cool completely.
    • Dust with powdered sugar if desired before serving.
