Cauliflower Fritters Recipe
Ingredients:
- 1 medium head of cauliflower, cut into florets
- 2 large eggs
- 1/2 cup breadcrumbs (plus extra for coating)
- 1/2 cup grated cheese (cheddar or Parmesan works well)
- 1/4 cup chopped parsley (optional)
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil or cooking spray (for baking or frying)
Instructions:
- Cook the Cauliflower:
- Steam or boil the cauliflower florets in a pot of salted water until tender, about 8-10 minutes. Drain and let cool slightly.
- Mash the cauliflower in a large bowl using a fork or potato masher. It doesn’t need to be completely smooth; some texture is fine.
- Prepare the Fritter Mixture:
- Add the eggs, breadcrumbs, grated cheese, garlic powder, parsley (if using), salt, and pepper to the mashed cauliflower. Mix until everything is well combined. The mixture should be firm enough to shape into patties; if it’s too loose, add more breadcrumbs.
- Form the Patties:
- Form the mixture into small patties (about 2-3 tablespoons each).
- Coat each patty lightly with extra breadcrumbs to give it a crispier finish.
- Cook the Fritters:
- To Bake: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking oil. Place the patties on the sheet and spray or brush the tops with a little olive oil. Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy.
- To Fry: Heat a few tablespoons of olive oil in a frying pan over medium heat. Fry the patties for 3-4 minutes on each side, or until golden and crispy. Drain on paper towels to remove excess oil.
- Serve:
- Serve the cauliflower fritters hot, with your favorite dipping sauce, such as sour cream, yogurt dip, or marinara sauce.
