Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tablespoons sugar

For the Cheesecake Filling:

  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

For the Chocolate Coating:

  • 2 cups milk chocolate or semi-sweet chocolate chips
  • 2 tablespoons coconut oil (or vegetable oil)

Instructions:

  1. Preheat Oven: Preheat your oven to 325°F (160°C) and line a square baking pan (8×8 inches) with parchment paper.
  2. Make the Crust:
    • In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until combined.
    • Press the mixture firmly into the bottom of the prepared baking pan to form an even layer.
    • Bake the crust for 8-10 minutes, then remove from the oven and let it cool slightly.
  3. Prepare the Cheesecake Filling:
    • In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.
    • Add the eggs one at a time, mixing after each addition. Stir in the vanilla extract and sour cream until fully incorporated.
    • Pour the cheesecake mixture over the cooled graham cracker crust and smooth the top.
  4. Bake the Cheesecake:
    • Bake the cheesecake for 30-35 minutes, or until the center is just set and slightly jiggles when shaken.
    • Remove from the oven and let it cool completely, then refrigerate for at least 4 hours (or overnight) to fully set.
  5. Cut the Cheesecake:
    • Once chilled and firm, remove the cheesecake from the pan using the parchment paper.

  6. Melt the Chocolate for Coating:
    • In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring between each interval, until smooth and fully melted.
  7. Dip the Cheesecake Bites:
    • Using a fork, dip each cheesecake bite into the melted chocolate, ensuring it’s fully coated. Let the excess chocolate drip off before placing the bite onto a parchment-lined baking sheet.
    • Once all the bites are coated, place the baking sheet in the fridge for about 10-15 minutes to allow the chocolate to set.
  8. Serve:
    • Once the chocolate has hardened, your chocolate-coated cheesecake bites are ready to enjoy! Store any leftovers in an airtight container in the refrigerator.
