- 16 oz (450g) cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
For the Chocolate Coating:
- 2 cups milk chocolate or semi-sweet chocolate chips
- 2 tablespoons coconut oil (or vegetable oil)
Instructions:
- Preheat Oven: Preheat your oven to 325°F (160°C) and line a square baking pan (8×8 inches) with parchment paper.
- Make the Crust:
- In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until combined.
- Press the mixture firmly into the bottom of the prepared baking pan to form an even layer.
- Bake the crust for 8-10 minutes, then remove from the oven and let it cool slightly.
- Prepare the Cheesecake Filling:
- In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.
- Add the eggs one at a time, mixing after each addition. Stir in the vanilla extract and sour cream until fully incorporated.
- Pour the cheesecake mixture over the cooled graham cracker crust and smooth the top.
- Bake the Cheesecake:
- Bake the cheesecake for 30-35 minutes, or until the center is just set and slightly jiggles when shaken.
- Remove from the oven and let it cool completely, then refrigerate for at least 4 hours (or overnight) to fully set.
- Cut the Cheesecake:
- Once chilled and firm, remove the cheesecake from the pan using the parchment paper.
- Cut the cheesecake into bite-sized squares or rectangles (about 1-2 inches in size).
- Melt the Chocolate for Coating:
- In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring between each interval, until smooth and fully melted.
- Dip the Cheesecake Bites:
- Using a fork, dip each cheesecake bite into the melted chocolate, ensuring it’s fully coated. Let the excess chocolate drip off before placing the bite onto a parchment-lined baking sheet.
- Once all the bites are coated, place the baking sheet in the fridge for about 10-15 minutes to allow the chocolate to set.
- Serve:
- Once the chocolate has hardened, your chocolate-coated cheesecake bites are ready to enjoy! Store any leftovers in an airtight container in the refrigerator.
