Creamy Tuna Pasta with Sun-Dried Tomatoes

 

 

Ingredients:

300g (10 oz) penne or any short pasta
1 can (150g or 5 oz) tuna in olive oil, drained
1/2 cup sun-dried tomatoes in oil, chopped
1 tablespoon olive oil (from the sun-dried tomato jar)
2 garlic cloves, minced
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 teaspoon red pepper flakes (optional, for heat)
1/2 teaspoon dried basil or 2 tablespoons fresh basil, chopped
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)

Cook the Pasta:

Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
Prepare the Sauce:

In a large skillet, heat the olive oil (from the sun-dried tomato jar) over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Add the chopped sun-dried tomatoes and cook for another 2 minutes.
Add Tuna and Cream:

Stir in the drained tuna, breaking it into chunks with a spoon.
Add the heavy cream and stir to combine. If the sauce is too thick, add a splash of the reserved pasta water to loosen it up.
Season and Combine:

Add the red pepper flakes, basil, and grated Parmesan cheese. Season with salt and pepper to taste.
Stir until the cheese melts and the sauce is creamy and smooth.
Toss the Pasta:

Add the cooked pasta to the skillet and toss everything together until the pasta is coated in the creamy sauce. If the sauce is too thick, add more pasta water as needed.
Serve:

Transfer the pasta to serving plates and garnish with fresh parsley and extra Parmesan cheese. Serve warm.
