Spicy Shrimp Ramen

 

 

 

Ingredients:

  • For the Broth:
    • 4 cups chicken or vegetable broth
    • 1 tablespoon soy sauce
    • 1 tablespoon fish sauce
    • 1 tablespoon sesame oil
    • 1-2 tablespoons sriracha or your favorite chili sauce (adjust for heat level)
    • 1-inch piece of ginger, thinly sliced
    • 3 cloves garlic, minced
    • 1 tablespoon miso paste (optional for extra depth)
    • 1 teaspoon sugar (optional)
  • For the Ramen:
    • 2 packs of instant ramen noodles (discard seasoning packets)
    • 12-16 medium shrimp, peeled and deveined
    • 1 cup shredded Napa cabbage or bok choy
    • 1/2 cup carrots, julienned
    • 1/2 cup red bell pepper, thinly sliced
    • 1/4 cup green onions, sliced
    • 1/4 cup fresh cilantro leaves, chopped

  1. Prepare the Broth:
    • In a large pot, heat the sesame oil over medium heat.
    • Add the minced garlic and sliced ginger, sautéing until fragrant, about 1-2 minutes.
    • Pour in the chicken or vegetable broth and bring to a simmer.
    • Stir in the soy sauce, fish sauce, sriracha (or chili sauce), miso paste (if using), and sugar (if using).
    • Let the broth simmer for about 10-15 minutes to allow the flavors to meld together. Taste and adjust seasoning as needed.
  2. Cook the Ramen Noodles:
    • While the broth is simmering, bring a separate pot of water to a boil.
    • Cook the ramen noodles according to the package instructions. Drain and set aside.
  3. Cook the Shrimp:
    • Add the shrimp to the simmering broth and cook for about 3-4 minutes, or until the shrimp are pink and fully cooked.
    • Add the shredded cabbage (or bok choy), julienned carrots, and sliced red bell pepper to the broth, cooking for another 2-3 minutes until the vegetables are tender-crisp.
  4. Assemble the Ramen:
    • Divide the cooked ramen noodles into serving bowls.
    • Ladle the hot broth, shrimp, and vegetables over the noodles.
    • Garnish with sliced green onions and fresh cilantro.
  5. Serve:
    • Serve the spicy shrimp ramen hot, with extra sriracha or chili sauce on the side for those who like more heat.

Optional Additions:

  • Soft-Boiled Egg: Add a soft-boiled egg to each bowl for extra richness.
  • Mushrooms: Add sliced shiitake or cremini mushrooms to the broth for an earthy flavor.
  • Lime Wedges: Serve with lime wedges on the side to squeeze over the ramen for a fresh, tangy kick.
