Mango Gelato Recipe

 

 

 

Ingredients:

  • 2 ripe mangoes (about 2 cups of mango puree)
  • 1 cup whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract (optional)
  • A pinch of salt

Instructions:

  1. Prepare the Mango Puree:
    • Peel and pit the mangoes, then cut them into chunks.
    • Place the mango chunks in a blender or food processor and blend until smooth to create a mango puree. You should have about 2 cups of puree.
    • Add the lemon juice to the mango puree and mix well. Set aside.
  2. Make the Gelato Base:
    • In a medium saucepan, combine the milk, heavy cream, and sugar.
    • Cook over medium heat, stirring frequently until the sugar is completely dissolved and the mixture is just starting to simmer. Do not let it boil.
    • Remove the saucepan from the heat and stir in the vanilla extract (if using) and a pinch of salt.
  3. Combine the Puree with the Gelato Base:
    • Allow the milk mixture to cool slightly, then stir in the mango puree until fully combined.
    • Transfer the mixture to a bowl and cover with plastic wrap, pressing the wrap against the surface of the mixture to prevent a skin from forming.
    • Refrigerate the mixture for at least 4 hours, or until thoroughly chilled. For best results, refrigerate overnight.
  4. Churn the Gelato:
    • Once the mixture is fully chilled, pour it into an ice cream maker.
    • Churn according to the manufacturer’s instructions until the gelato is thick and creamy. This usually takes about 20-25 minutes.
  5. Freeze and Serve:
    • Transfer the gelato to an airtight container and freeze for at least 2 hours to firm up.
    • When ready to serve, scoop the gelato into bowls or cones.

Tips:

  • If you don’t have an ice cream maker, you can pour the mixture into a shallow dish and place it in the freezer, stirring every 30 minutes until it reaches a gelato-like consistency.
  • You can substitute the mango with other fruits like strawberries, peaches, or berries for different flavors.
  • If you want a more intense mango flavor, you can add a few drops of mango extract.
