Ingredients:

  • 6 large eggs
  • 1 1/2 cups milk (whole, 2%, or even half-and-half for a richer texture)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup diced ham (or cooked sausage or bacon)
  • 1 cup shredded cheddar cheese (divided)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup diced bell peppers (red, green, or a mix)
  • 1/2 cup diced onions
  • 2 cups frozen hash browns, thawed (optional)
  • Chopped chives or green onions for garnish

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease a 9×13-inch baking dish with butter or non-stick cooking spray.
  2. Prepare the Egg Mixture:
    • In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.
  3. Assemble the Casserole:
    • If using hash browns, spread them evenly on the bottom of the prepared baking dish.
    • Sprinkle the diced ham (or sausage/bacon), diced bell peppers, and onions evenly over the hash browns.
    • Add 1/2 cup of the shredded cheddar cheese and all of the mozzarella cheese on top of the vegetables and meat.
    • Pour the egg mixture evenly over the top.
  4. Top with Cheese:
    • Sprinkle the remaining 1/2 cup of cheddar cheese over the top of the casserole.
  5. Bake the Casserole:
    • Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the eggs are set and the top is golden brown.
  6. Garnish and Serve:
    • Remove the casserole from the oven and let it cool slightly before slicing.
    • Garnish with chopped chives or green onions.
    • Serve warm.

Tips:

  • This casserole can be prepared the night before and stored in the refrigerator. In the morning, just bake it as directed.
  • You can add other vegetables like spinach, mushrooms, or tomatoes based on your preference.
  • Serve with a side of fresh fruit or toast for a complete breakfast.
