Breakfast Casserole Recipe
Ingredients:
- 6 large eggs
- 1 1/2 cups milk (whole, 2%, or even half-and-half for a richer texture)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup diced ham (or cooked sausage or bacon)
- 1 cup shredded cheddar cheese (divided)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup diced bell peppers (red, green, or a mix)
- 1/2 cup diced onions
- 2 cups frozen hash browns, thawed (optional)
- Chopped chives or green onions for garnish
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking dish with butter or non-stick cooking spray.
- Prepare the Egg Mixture:
- In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.
- Assemble the Casserole:
- If using hash browns, spread them evenly on the bottom of the prepared baking dish.
- Sprinkle the diced ham (or sausage/bacon), diced bell peppers, and onions evenly over the hash browns.
- Add 1/2 cup of the shredded cheddar cheese and all of the mozzarella cheese on top of the vegetables and meat.
- Pour the egg mixture evenly over the top.
- Top with Cheese:
- Sprinkle the remaining 1/2 cup of cheddar cheese over the top of the casserole.
- Bake the Casserole:
- Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the eggs are set and the top is golden brown.
- Garnish and Serve:
- Remove the casserole from the oven and let it cool slightly before slicing.
- Garnish with chopped chives or green onions.
- Serve warm.
Tips:
- This casserole can be prepared the night before and stored in the refrigerator. In the morning, just bake it as directed.
- You can add other vegetables like spinach, mushrooms, or tomatoes based on your preference.
- Serve with a side of fresh fruit or toast for a complete breakfast.
