Ingredients:

  • 1 large head of broccoli, chopped (including stems)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter or olive oil
  • 4 cups (1L) vegetable or chicken broth
  • 1 cup (240ml) heavy cream, milk, or coconut milk for a dairy-free option
  • 1 medium potato, peeled and diced (optional, for extra creaminess)
  • Salt and pepper to taste
  • A pinch of nutmeg (optional)
  • Freshly grated Parmesan cheese for garnish (optional)
  • Croutons for serving (optional)
  • Fresh herbs for garnish, such as parsley or chives (optional)

Instructions:

  1. Sauté the Vegetables:
    • In a large pot, heat the butter or olive oil over medium heat.
    • Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
    • Add the minced garlic and sauté for another minute, being careful not to let it burn.
  2. Cook the Broccoli and Potato:
    • Add the chopped broccoli and diced potato to the pot. Stir to combine with the onions and garlic.
    • Pour in the vegetable or chicken broth, and bring the mixture to a boil.
    • Reduce the heat to a simmer, cover the pot, and cook for about 15-20 minutes, or until the broccoli and potato are tender.
  3. Blend the Soup:
    • Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and puree until smooth. Be cautious with the hot liquid.
    • If the soup is too thick, you can add more broth or water to reach your desired consistency.
  4. Add the Cream:
    • Stir in the heavy cream or your chosen milk alternative. Heat the soup gently, but do not let it boil.
    • Season with salt, pepper, and a pinch of nutmeg if using.
  5. Serve and Garnish:
    • Ladle the soup into bowls and garnish with freshly grated Parmesan cheese, croutons, and fresh herbs if desired.
    • Serve hot with your favorite crusty bread or a side salad.
