– 1 cup all-purpose flour
– 2 large eggs
– 1/2 cup milk
– 1/2 cup water
– 1/4 teaspoon salt
– 2 tablespoons melted butter
– Optional: 1 tablespoon sugar (if making sweet crepes)
– Butter or oil for cooking

**Instructions:**

 

1. **Prepare the Batter:**
– In a large mixing bowl, whisk together the flour and eggs.
– Gradually add in the milk and water, stirring to combine.
– Add the salt (and sugar if using) and melted butter. Mix until the batter is smooth and free of lumps.

2. **Rest the Batter:**
– Let the batter rest for about 15-30 minutes. This allows the gluten to relax and results in tender crepes.

– Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with butter or oil.
