**Eggplant Rollatini

 

 

 

Ingredients:

– 2 large eggplants
– Salt, for sprinkling
– 2 cups ricotta cheese
– 1/2 cup grated Parmesan cheese
– 1 cup shredded mozzarella cheese
– 1 large egg
– 2 cloves garlic, minced
– 1/4 cup fresh basil or parsley, chopped
– 2 cups marinara sauce
– 1/2 cup breadcrumbs
– Olive oil, for brushing
– Black pepper, to taste

Instructions:

 

1. **Prepare the Eggplant:**
– Slice the eggplants lengthwise into 1/4-inch thick slices.
– Sprinkle the slices with salt and place them in a colander. Let them sit for about 30 minutes to draw out excess moisture.
– Rinse the eggplant slices under cold water to remove the salt and pat them dry with a paper towel.

2. **Cook the Eggplant:**
– Preheat the oven to 375°F (190°C).
– Brush the eggplant slices with olive oil and place them on a baking sheet.
– Roast the eggplant slices in the preheated oven for about 15 minutes, until they are tender but not fully cooked through. Remove from the oven and let them cool slightly.

3. **Prepare the Filling:**
– In a mixing bowl, combine the ricotta cheese, Parmesan cheese, half of the mozzarella cheese, the egg, minced garlic, chopped basil or parsley, salt, and pepper. Mix well until the filling is smooth and well combined.

4. **Assemble the Rollatini:**
– Spread a thin layer of marinara sauce in the bottom of a baking dish.
– Take one eggplant slice and place a spoonful of the cheese mixture at one end. Roll up the slice and place it seam-side down in the baking dish. Repeat with the remaining eggplant slices and filling.
– Pour the remaining marinara sauce over the eggplant rolls.

5. **Top and Bake:**
– Sprinkle the remaining mozzarella cheese and the breadcrumbs over the top of the rollatini.
– Drizzle a little olive oil over the breadcrumbs to help them brown.
– Bake the rollatini in the preheated oven for about 25-30 minutes, until the cheese is melted and bubbly and the breadcrumbs are golden brown.

6. **Serve:**
– Garnish with additional fresh basil or parsley if desired.
– Serve hot as a main dish or as a side to pasta or salad.
