*Garlic Butter Shrimp Pasta

 

 

 

Ingredients:

 

– **Spaghetti or linguine**: 12 oz (about 340g)
– **Large shrimp**: 1 lb (450g), peeled and deveined
– **Olive oil**: 2 tablespoons
– **Butter**: 4 tablespoons (divided)
– **Garlic**: 4 cloves, minced
– **Red pepper flakes**: 1/2 teaspoon (optional, for heat)
– **Chicken broth**: 1/2 cup (120ml)
– **White wine**: 1/2 cup (120ml) or additional chicken broth
– **Lemon juice**: 2 tablespoons
– **Italian seasoning**: 1 teaspoon
– **Salt and pepper**: to taste
– **Parsley**: 2 tablespoons, chopped (for garnish)
– **Grated Parmesan cheese**: for serving

Instructions:

 

1. **Cook the Pasta:**
– Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

2. **Cook the Shrimp:**
– While the pasta is cooking, heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat.
– Add the shrimp to the skillet, season with salt, pepper, and Italian seasoning. Cook until the shrimp turn pink and are opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.

3. **Make the Garlic Butter Sauce:**
– In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes (if using). Sauté for about 1-2 minutes until the garlic is fragrant.
– Pour in the chicken broth and white wine, scraping the bottom of the skillet to deglaze. Bring the mixture to a simmer and cook for about 3-4 minutes to reduce slightly.
– Stir in the lemon juice and add the cooked shrimp back to the skillet.

4. **Combine the Pasta:**
– Add the cooked pasta to the skillet, tossing it in the garlic butter sauce. If the pasta seems dry, add some of the reserved pasta water, a little at a time, until the sauce coats the pasta to your liking.

5. **Serve:**
– Garnish with chopped parsley and serve hot with grated Parmesan cheese on top.
