Ingredients:
– 3 cups all-purpose flour
– 1 tsp salt
– 1 tsp sugar
– 1 packet (2 1/4 tsp) active dry yeast
– 1 cup warm water (110°F/45°C)
– 2 tbsp vegetable oil
– 1/2 cup melted butter (for layering)
– Extra flour for dusting
Instructions:
1. **Prepare the Dough:**
– In a small bowl, dissolve the sugar and yeast in the warm water. Let it sit for about 5 minutes until frothy.
– In a large bowl, combine the flour and salt.
– Add the yeast mixture and vegetable oil to the flour. Mix until a dough forms.
– Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
– Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
2. **Shape the Flatbreads:**
– Punch down the risen dough and divide it into 8 equal pieces.
– Roll each piece into a ball.
– On a floured surface, roll out each ball into a thin circle.
3. **Layer and Roll:**
– Brush the surface of each circle with melted butter.
– Roll up the circle into a log, then coil the log into a spiral shape.
– Flatten the spiral with your hand and roll it out again into a thin circle.

4. **Cook the Flatbreads:**
– Heat a non-stick skillet or griddle over medium heat.
– Place a rolled-out flatbread onto the hot skillet.
– Cook for about 2-3 minutes on each side, or until golden brown and cooked through.
– Repeat with the remaining dough, brushing each flatbread with melted butter as it cooks.
5. **Serve:**
– Serve the flaky flatbreads warm. They are perfect on their own or with dips and spreads.
