Hearty Cabbage Soup

 

 

 

Ingredients:

– 1 tablespoon olive oil
– 1 pound ground beef or turkey
– 1 onion, chopped
– 2 cloves garlic, minced
– 4 cups chopped cabbage
– 2 carrots, sliced
– 2 celery stalks, sliced
– 1 red bell pepper, chopped
– 1 can (14.5 oz) diced tomatoes
– 1 can (15 oz) kidney beans, drained and rinsed
– 6 cups beef or vegetable broth
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Salt and pepper to taste
– 2 tablespoons chopped fresh parsley for garnish

Instructions:

 

1. **Cook the Meat:**
– In a large pot, heat olive oil over medium heat. Add the ground beef or turkey and cook until browned. Drain excess fat if necessary.

2. **Sauté the Vegetables:**
– Add the chopped onion and minced garlic to the pot. Sauté for 2-3 minutes until the onion is translucent.

3. **Add the Vegetables and Spices:**
– Stir in the chopped cabbage, carrots, celery, and bell pepper. Cook for another 5 minutes, stirring occasionally.

4. **Add the Tomatoes and Beans:**
– Add the diced tomatoes (with juice), kidney beans, broth, oregano, and basil to the pot. Stir well to combine.

– Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the vegetables are tender.

– Ladle the soup into bowls, garnish with chopped fresh parsley, and serve hot.
