– 2 cloves garlic, minced
– 2 bell peppers, chopped (any color)
– 1 can (14.5 oz) diced tomatoes

– 4 cups beef broth or chicken broth
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– 1 cup cooked rice (white or brown)
– Salt and pepper, to taste

– Grated Parmesan cheese (optional)
Instructions
1. **Cook the Meat:**
– In a large pot, heat olive oil over medium heat.
– Add the ground beef or turkey and cook until browned, breaking it up with a spoon. Drain any excess fat.

2. **Sauté the Vegetables:**
– Add the chopped onion and garlic to the pot and sauté until the onion is translucent.
– Stir in the chopped bell peppers and cook for another 3-4 minutes until they start to soften.
3. **Prepare the Soup:**
– Add the diced tomatoes, tomato sauce, and beef broth to the pot.
– Stir in the oregano, basil, salt, and pepper.
– Bring the soup to a boil, then reduce the heat to low and simmer for 20-25 minutes.
4. **Add the Rice:**
– Stir in the cooked rice and let it heat through for about 5 minutes.
