Ingredients

– 8 chicken drumsticks

– 1 tablespoon sesame oil
– 2 eggs, beaten
– 2 green onions, chopped

1. **Prepare the Fried Chicken:**
– Marinate the chicken drumsticks in buttermilk, salt, and pepper for at least 1 hour or overnight in the refrigerator.
– In a shallow dish, mix the flour, paprika, garlic powder, onion powder, salt, and pepper.
– Heat oil in a deep skillet or fryer to 350°F (175°C).
– Remove the chicken from the marinade, allowing excess buttermilk to drip off, then coat each drumstick in the seasoned flour.
– Fry the chicken in batches for 10-12 minutes, turning occasionally, until golden brown and cooked through.
– Drain on paper towels.
2. **Prepare the Vegetable Fried Rice:**
– Heat vegetable oil in a large pan or wok over medium heat.
– Add the chopped onion and garlic, sauté until the onion is translucent.
– Add the mixed vegetables and cook until tender.
– Push the vegetables to the side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until cooked, then mix with the vegetables.
– Add the cooked rice, soy sauce, and sesame oil, stirring well to combine.
– Season with salt and pepper to taste.
– Add chopped green onions and stir.
