**Ingredients:**

– 1 pound ground beef
– 2 tablespoons olive oil
– 1 small onion, diced
– 2 cloves garlic, minced
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 teaspoon chili powder
– 1 teaspoon cumin
– 1/2 teaspoon paprika
– 1/2 teaspoon oregano
– 1 cup frozen diced potatoes or tater tots
– 1 cup shredded cheddar cheese
– 1/2 cup sour cream
– 1/2 cup salsa
– 1/2 cup chopped tomatoes
– 1/4 cup sliced green onions
– 6 large flour tortillas
– 1 cup shredded Mexican cheese blend (for topping)
– Optional toppings: additional sour cream, salsa, chopped cilantro

**Instructions:**

1. **Preheat Oven:**
– Preheat your oven to 375°F (190°C).

2. **Cook Ground Beef:**
– Heat the olive oil in a large skillet over medium-high heat.
– Add the diced onion and cook until softened, about 3-4 minutes.
– Add the minced garlic and cook for an additional 1 minute.
– Add the ground beef and cook until browned, breaking it apart with a spoon, about 6-8 minutes.
– Drain any excess fat.

3. **Season Ground Beef:**
– Add the salt, black pepper, chili powder, cumin, paprika, and oregano to the beef mixture. Stir to combine.
– Cook for another 2-3 minutes to allow the flavors to meld.

4. **Prepare Potatoes:**
– If using frozen diced potatoes or tater tots, cook them according to the package instructions until crispy. Set aside.

5. **Assemble Burritos:**
– Lay a tortilla flat and add a portion of the cooked ground beef mixture in the center.
– Top with a few crispy potatoes, a sprinkle of shredded cheddar cheese, a dollop of sour cream, a spoonful of salsa, chopped tomatoes, and sliced green onions.
– Fold in the sides of the tortilla and roll it up tightly. Repeat with the remaining tortillas and filling.

6. **Bake Burritos:**
– Place the assembled burritos in a baking dish, seam-side down.
– Sprinkle the shredded Mexican cheese blend on top of the burritos.
– Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and the burritos are heated through.

7. **Serve:**
– Remove from the oven and let cool for a few minutes.
– Serve with additional sour cream, salsa, and chopped cilantro if desired.
