Classic Banana Pudding

 

 

**Ingredients:**

– 4 large ripe bananas
– 1 tablespoon lemon juice
– 1 cup granulated sugar
– 1/4 cup cornstarch
– 1/4 teaspoon salt
– 4 cups whole milk
– 4 large egg yolks
– 2 teaspoons vanilla extract
– 1 tablespoon unsalted butter
– Vanilla wafers (optional, for layering and garnish)
– Whipped cream (optional, for serving)
– Ground cinnamon or nutmeg (for garnish)
– Fresh mint leaves (for garnish)

**Instructions:**

1. **Prepare the Bananas:**
– Peel and slice the bananas into thin rounds.
– Toss the banana slices with lemon juice to prevent browning and set aside.

2. **Make the Pudding:**
– In a medium saucepan, combine the granulated sugar, cornstarch, and salt.
– Gradually whisk in the milk until the mixture is smooth.
– Cook over medium heat, stirring constantly, until the mixture begins to thicken and comes to a boil. Continue to cook for 1-2 minutes until thickened.

3. **Temper the Egg Yolks:**
– In a small bowl, whisk the egg yolks.
– Gradually whisk in about 1 cup of the hot milk mixture into the egg yolks to temper them.
– Return the egg yolk mixture to the saucepan, whisking constantly.
– Cook for another 2-3 minutes until the pudding is thick and coats the back of a spoon.

4. **Add Vanilla and Butter:**
– Remove the saucepan from the heat and stir in the vanilla extract and butter until smooth.

5. **Assemble the Banana Pudding:**
– In serving cups or a large bowl, layer the pudding and banana slices, starting with a layer of pudding at the bottom. Repeat the layers, ending with a layer of pudding on top.
– If desired, you can also layer vanilla wafers between the pudding and banana slices for added texture.

6. **Chill and Serve:**
– Cover the pudding with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
– Refrigerate for at least 2 hours or until well chilled.

7. **Garnish:**
– Before serving, top with whipped cream, a sprinkle of ground cinnamon or nutmeg, and a fresh mint leaf for garnish.
