Hearty Cabbage and Ground Beef Soup
Ingredients:
– 1 lb ground beef
– 1 tbsp olive oil
– 1 large onion, chopped
– 2 cloves garlic, minced
– 4 cups chopped cabbage

– 3 celery stalks, chopped
– 1 can (14.5 oz) diced tomatoes, with juice
– 6 cups beef broth
– 1 tsp dried thyme
– 1 tsp dried basil
– 1 tsp dried oregano

Instructions:
1. **Cook the Ground Beef:**
– In a large pot or Dutch oven, heat the olive oil over medium-high heat.
– Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
2. **Sauté the Vegetables:**
– Add the chopped onion to the pot and cook for about 5 minutes, until softened.
– Add the minced garlic and cook for another 1 minute, until fragrant.
3. **Add the Vegetables and Tomatoes:**
– Stir in the chopped cabbage, sliced carrots, and chopped celery.
