Stuffed Meatloaf Muffins

 

 

Ingredients:

– 1 lb ground beef
– 1/2 cup bread crumbs
– 1/4 cup milk
– 1 large egg
– 1/2 cup finely chopped onion
– 2 cloves garlic, minced
– 1 tsp Worcestershire sauce
– 1 tsp salt
– 1/2 tsp black pepper
– 1 cup shredded cheese (cheddar, mozzarella, or your choice)
– 1/2 cup ketchup
– 1/2 cup shredded mozzarella or cheddar cheese (for topping)
– Fresh parsley, chopped (for garnish)

Instructions:

1. **Preheat the Oven:**
– Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with muffin liners.

2. **Prepare the Meatloaf Mixture:**
– In a large bowl, combine the ground beef, bread crumbs, milk, egg, chopped onion, minced garlic, Worcestershire sauce, salt, and black pepper. Mix until well combined.

3. **Assemble the Meatloaf Muffins:**
– Take a small handful of the meatloaf mixture and press it into the bottom of each muffin cup, creating a well in the center.
– Fill the well with a small amount of shredded cheese.
– Take another small handful of the meatloaf mixture and cover the cheese, pressing it down to seal the cheese inside and fill the muffin cup.
– Repeat with the remaining meatloaf mixture and cheese.

4. **Bake the Meatloaf Muffins:**
– Bake in the preheated oven for 20-25 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (71°C).

5. **Top with Ketchup and Cheese:**
– Remove the meatloaf muffins from the oven and top each one with a spoonful of ketchup and a sprinkle of shredded cheese.
– Return the muffins to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

6. **Garnish and Serve:**
– Remove the meatloaf muffins from the oven and let them cool slightly.
– Garnish with chopped fresh parsley.
