Lemon Tarts
Ingredients:
**For the Crust:**
– 1 1/2 cups all-purpose flour
– 1/2 cup powdered sugar
– 1/4 teaspoon salt
– 1/2 cup unsalted butter, cold and cut into small cubes
– 1 large egg yolk
– 1 tablespoon ice water (if needed)
**For the Lemon Filling:**
– 1 cup granulated sugar
– 3 large eggs
– 1/2 cup freshly squeezed lemon juice (about 3-4 lemons)
– 1 tablespoon lemon zest
– 1/2 cup unsalted butter, melted
– 2 tablespoons all-purpose flour

**For Garnish:**
– Powdered sugar, for dusting
– Fresh mint leaves (optional)
Instructions:
1. **Prepare the Crust:**
– Preheat your oven to 350°F (175°C).
– In a food processor, combine the flour, powdered sugar, and salt. Pulse to mix.
– Add the cold butter and pulse until the mixture resembles coarse crumbs.
– Add the egg yolk and pulse until the dough starts to come together. If the dough is too dry, add the ice water, one teaspoon at a time, until it forms a ball.
– Press the dough evenly into the bottom and sides of a tart pan with a removable bottom (or use mini tart pans for individual tarts).
– Prick the crust with a fork and bake for 10-12 minutes, or until lightly golden. Let it cool completely.
2. **Prepare the Lemon Filling:**
– In a medium bowl, whisk together the sugar, eggs, lemon juice, and lemon zest until well combined.
– Add the melted butter and flour, whisking until smooth.
3. **Assemble and Bake:**
– Pour the lemon filling into the cooled crust(s).
– Bake for 15-20 minutes for mini tarts or 25-30 minutes for a larger tart, or until the filling is set and slightly golden on top.
– Allow the tarts to cool completely before removing them from the tart pan(s).

4. **Garnish and Serve:**
– Dust the tarts with powdered sugar and garnish with fresh mint leaves if desired.
– Serve chilled or at room temperature.
