Crispy Vegetable Rolls
Ingredients:
– 2 cups grated zucchini (squeeze out excess moisture)
– 1 cup grated carrots
– 1 cup finely chopped green onions
– 1 cup grated cheese (such as mozzarella or cheddar)
– 1/2 cup flour
– 2 eggs
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/4 teaspoon garlic powder
– 1/4 teaspoon paprika
– 2 tablespoons vegetable oil for frying
Instructions:
1. **Prepare the Vegetables:**
– Grate the zucchini and carrots. Squeeze out excess moisture from the zucchini using a cheesecloth or a clean kitchen towel.
– Finely chop the green onions.

2. **Mix Ingredients:**
– In a large bowl, combine the grated zucchini, carrots, green onions, grated cheese, and flour.
– In a separate bowl, beat the eggs and then add them to the vegetable mixture.
– Add salt, black pepper, garlic powder, and paprika. Mix everything until well combined.
3. **Form the Rolls:**
– Take a small portion of the mixture and shape it into a small log or roll using your hands. Repeat with the remaining mixture.
4. **Fry the Rolls:**
– Heat vegetable oil in a large skillet over medium heat.
– Place the rolls in the skillet and cook them for about 3-4 minutes on each side or until they are golden brown and crispy.
5. **Serve:**
– Remove the rolls from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
– Serve hot with your favorite dipping sauce.
