Cajun Shrimp Pasta
Ingredients:
– 1 lb (450g) large shrimp, peeled and deveined
– 2 tablespoons Cajun seasoning
– 2 tablespoons olive oil
– 1 lb (450g) rotini or fusilli pasta
– 1 tablespoon butter
– 1 small onion, diced
– 1 bell pepper, diced
– 3 cloves garlic, minced
– 1 cup heavy cream
– 1 cup chicken broth
– 1/2 cup grated Parmesan cheese
– 1 tablespoon tomato paste
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)

1. **Prepare the Pasta:**
– Cook the pasta according to the package instructions until al dente. Drain and set aside.
2. **Season the Shrimp:**
– Toss the shrimp with 1 tablespoon of Cajun seasoning until evenly coated.
3. **Cook the Shrimp:**
– Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
4. **Prepare the Sauce:**
– In the same skillet, add the remaining tablespoon of olive oil and butter. Sauté the diced onion and bell pepper until softened, about 5 minutes.
– Add the minced garlic and cook for another 1-2 minutes until fragrant.
– Stir in the tomato paste and remaining tablespoon of Cajun seasoning, cooking for 1 minute.
5. **Finish the Sauce:**
– Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer and cook until slightly thickened, about 5-7 minutes.
– Stir in the grated Parmesan cheese until melted and the sauce is creamy. Season with salt and pepper to taste.

6. **Combine and Serve:**
– Add the cooked pasta to the skillet, tossing to coat in the sauce. Gently fold in the cooked shrimp.
– Garnish with chopped fresh parsley and serve immediately.
