Ingredients:

 

**For the Lamb Chops:**
– 8 lamb chops
– 2 tbsp olive oil
– 4 cloves garlic, minced
– 1 tbsp fresh rosemary, chopped
– 1 tbsp fresh thyme, chopped

**For the Mashed Potatoes:**
– 4 large russet potatoes, peeled and cut into chunks
– 4 tbsp butter
– 1/2 cup heavy cream
– Salt and pepper to taste

**For the Asparagus:**
– 1 lb asparagus, trimmed
– 2 tbsp olive oil
– Salt and pepper to taste

**For the Sauce:**
– 1 cup beef broth
– 1/2 cup red wine
– 2 tbsp balsamic vinegar
– 1 tbsp honey
– 2 tbsp butter
– Salt and pepper to taste

Instructions:

 

1. **Marinate the Lamb Chops**: In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Rub this mixture onto the lamb chops and let them marinate for at least 30 minutes.

2. **Prepare the Mashed Potatoes**:
– Place the potato chunks in a large pot and cover with cold water. Add a generous pinch of salt.
– Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
– Drain the potatoes and return them to the pot. Add butter and heavy cream.
– Mash the potatoes until smooth and creamy. Season with salt and pepper to taste.

3. **Cook the Asparagus**:
– Preheat your grill or grill pan over medium-high heat.
– Toss the asparagus with olive oil, salt, and pepper.
– Grill the asparagus for 5-7 minutes, turning occasionally, until tender and slightly charred.

4. **Grill the Lamb Chops**:
– Preheat your grill or grill pan over medium-high heat.
– Grill the lamb chops for about 4-5 minutes per side for medium-rare, or until they reach your desired level of doneness.
– Remove the chops from the grill and let them rest for a few minutes.

– In a small saucepan, combine beef broth, red wine, balsamic vinegar, and honey.
– Bring to a boil and reduce the heat to a simmer. Cook until the sauce has reduced by half, about 10 minutes.

6. **Plate the Dish**:
– Place a serving of mashed potatoes on each plate.
– Top with grilled asparagus and lamb chops.
– Drizzle the sauce over the lamb chops and serve immediately.
