Yorkshire Puddings
Ingredients
– 1 cup all-purpose flour
– 1 cup milk
– 3 large eggs
– 1/2 teaspoon salt
– 1/4 cup vegetable oil or beef drippings

1. **Preheat the Oven:**
– Preheat your oven to 425°F (220°C).
– Place a muffin tin in the oven to preheat as well.
2. **Prepare the Batter:**
– In a mixing bowl, whisk together the flour and salt.
– In a separate bowl, beat the eggs and milk together until well combined.
– Gradually add the wet ingredients to the dry ingredients, whisking until the batter is smooth and free of lumps. Let the batter rest for at least 30 minutes at room temperature.
3. **Heat the Oil:**
– Remove the hot muffin tin from the oven and add about 1 teaspoon of vegetable oil or beef drippings to each cup. The oil should be very hot and sizzling.
4. **Bake the Puddings:**
– Pour the batter into the hot muffin cups, filling each cup about halfway.
– Immediately return the muffin tin to the oven and bake for 20-25 minutes, or until the puddings are puffed up and golden brown. Do not open the oven door during baking as this can cause the puddings to collapse.
5. **Serve:**
– Serve the Yorkshire puddings immediately, while they are still warm and crisp. They are perfect as a side dish with roast beef or any meal with gravy.
