Herb-Roasted Potatoes

 

 

 

Ingredients:

– **2 pounds baby potatoes, halved**
– **3 tablespoons olive oil**
– **3 cloves garlic, minced**
– **1 tablespoon fresh rosemary, chopped**
– **1 tablespoon fresh thyme, chopped**
– **1 tablespoon fresh parsley, chopped (optional)**
– **Salt and pepper to taste**

Instructions:

 

1. **Preheat Oven**:
– Preheat your oven to 400°F (200°C).

2. **Prepare the Potatoes**:
– In a large bowl, toss the halved potatoes with olive oil, minced garlic, chopped rosemary, thyme, salt, and pepper. Ensure all potatoes are well-coated.

3. **Roast the Potatoes**:
– Spread the potatoes in a single layer on a baking sheet.
