Crispy Onion Rings
Ingredients:
– **2 large onions, sliced into rings**
– **1 cup all-purpose flour**
– **1 teaspoon baking powder**
– **1 teaspoon salt**
– **1 cup buttermilk**
– **1 egg**
– **1 cup panko breadcrumbs**
– **1/2 cup regular breadcrumbs**
– **1 teaspoon garlic powder**
– **1 teaspoon paprika**
– **Salt and pepper to taste**
– **Oil for frying**
Instructions:
1. **Prepare the Onions**:
– Slice the onions into 1/4-inch thick rings and separate them. Set aside.

2. **Prepare the Breading Station**:
– In a shallow bowl, mix the flour, baking powder, and salt.
– In another bowl, whisk together the buttermilk and egg.
– In a third bowl, mix the panko breadcrumbs, regular breadcrumbs, garlic powder, paprika, salt, and pepper.
3. **Bread the Onion Rings**:
– Dredge each onion ring in the flour mixture, shaking off any excess.
– Dip the floured onion rings into the buttermilk mixture, allowing any excess to drip off.
– Finally, coat the onion rings in the breadcrumb mixture, pressing gently to adhere.
4. **Fry the Onion Rings**:
– Heat oil in a deep fryer or large pot to 350°F (175°C).
– Fry the onion rings a few at a time, making sure not to overcrowd the pot. Fry until golden brown, about 2-3 minutes.
– Use a slotted spoon to remove the onion rings from the oil and place them on a paper towel-lined plate to drain excess oil.
5. **Serve**:
– Season with additional salt if desired.
– Serve immediately with your favorite dipping sauce.
