Spicy Beef and Vegetable Noodles
Ingredients:
– **For the Noodles:**
– 300g wide rice noodles or any wide flat noodles
– 1 tablespoon vegetable oil
– **For the Sauce:**
– 1/4 cup soy sauce
– 2 tablespoons oyster sauce
– 1 tablespoon hoisin sauce
– 1 tablespoon chili garlic sauce (adjust to taste)
– 1 tablespoon brown sugar
– 1/4 cup water
– **For the Stir-Fry:**
– 2 tablespoons vegetable oil
– 500g ground beef
– 1 large onion, diced
– 3 cloves garlic, minced
– 1 tablespoon ginger, minced
– 1 red bell pepper, chopped
– 1 green bell pepper, chopped
– 1 carrot, julienned
– 1/2 cup green onions, chopped
– Salt and pepper to taste

Instructions:
1. **Prepare the Noodles:**
– Cook the noodles according to the package instructions. Drain and set aside.
– Toss the noodles with a tablespoon of vegetable oil to prevent sticking.
2. **Make the Sauce:**
– In a bowl, combine soy sauce, oyster sauce, hoisin sauce, chili garlic sauce, brown sugar, and water. Mix well and set aside.
3. **Cook the Stir-Fry:**
– Heat the vegetable oil in a large pan or wok over medium-high heat.
– Add the ground beef and cook until browned, breaking it up with a spatula.
– Add the onion, garlic, and ginger. Sauté until the onion is translucent and fragrant.
– Add the red and green bell peppers, and carrot. Stir-fry for about 5 minutes until the vegetables are tender but still crisp.
4. **Combine:**
– Pour the sauce over the meat and vegetables, stirring to coat everything evenly.
– Add the cooked noodles to the pan, tossing to combine with the sauce, meat, and vegetables.
– Cook for another 2-3 minutes until everything is well-mixed and heated through.
