Tonight’s soup
threw everything into the pot to use up any leftovers. I had leftover chicken, fried chicken, and rice noodles from last night, so I decided to make it into a ramen dish. I cut two very thin carrots and put them in the pan with some evvoo. I make it so much that when I add walnuts, it adds flavor to the soup
. I used ginger powder, garlic, onion, red pepper, chicken oil, turmeric, salt and pepper. After cooking the carrots to
springs, I added low-sodium chicken bone broth, being careful to scrape the pan so all the flavor came out of the bottom of the pan. I let it boil and add my remaining chicken, rice, chickpeas and frozen peas. Turn off the heat and add the sesame oil. At one point I added a round of Trader Joe’s chili oil to my bowl. I wish I had eggs to add but unfortunately I was out. It was delicious even though I used my leftovers so I’m happy
