Classic Fluffy Sponge Cake Recipe

 

 

 

 

Ingredients

  • 4 large eggs (room temperature)
  • 1 cup (200g) granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup (120ml) milk (warmed)
  • 1/2 cup (120ml) vegetable oil
  • 1 and 1/2 cups (190g) all-purpose flour (sifted)
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 175°C (350°F).
    • Grease a round 8-inch cake pan and line the bottom with parchment paper.
  2. Prepare the Batter:
    • In a mixing bowl, beat the eggs and sugar using an electric mixer on high speed until the mixture is pale and tripled in volume (about 8-10 minutes).
    • Add vanilla extract and mix gently.
  3. Combine Wet Ingredients:
    • In a small bowl, combine the warm milk and vegetable oil.
    • Gradually add this mixture to the beaten eggs, folding gently with a spatula to retain air in the batter.
  4. Incorporate Dry Ingredients:
    • Sift together the flour, baking powder, and salt.
    • Add the dry ingredients to the wet mixture in three additions, folding gently after each addition. Be careful not to deflate the batter.
  5. Bake:
    • Pour the batter into the prepared cake pan.
    • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool:
    • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  7. Serve or Decorate:
    • Slice the cake in layers if desired and frost with whipped cream, buttercream, or enjoy it plain.
