Classic Fluffy Sponge Cake Recipe
Ingredients
- 4 large eggs (room temperature)
- 1 cup (200g) granulated sugar
- 1 tsp vanilla extract
- 1/2 cup (120ml) milk (warmed)
- 1/2 cup (120ml) vegetable oil
- 1 and 1/2 cups (190g) all-purpose flour (sifted)
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat Oven and Prepare Pan:
- Preheat your oven to 175°C (350°F).
- Grease a round 8-inch cake pan and line the bottom with parchment paper.
- Prepare the Batter:
- In a mixing bowl, beat the eggs and sugar using an electric mixer on high speed until the mixture is pale and tripled in volume (about 8-10 minutes).
- Add vanilla extract and mix gently.
- Combine Wet Ingredients:
- In a small bowl, combine the warm milk and vegetable oil.
- Gradually add this mixture to the beaten eggs, folding gently with a spatula to retain air in the batter.
- Incorporate Dry Ingredients:
- Sift together the flour, baking powder, and salt.
- Add the dry ingredients to the wet mixture in three additions, folding gently after each addition. Be careful not to deflate the batter.
- Bake:
- Pour the batter into the prepared cake pan.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool:
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Serve or Decorate:
- Slice the cake in layers if desired and frost with whipped cream, buttercream, or enjoy it plain.
