Cheesy Beef-Stuffed Rolls

 

 

 

Ingredients:

  • For the filling:
    • 500g ground beef
    • 1 small onion, finely diced
    • 2 garlic cloves, minced
    • 1 tsp paprika
    • 1 tsp dried oregano
    • Salt and pepper, to taste
    • 1/2 cup cooked rice (optional, for added texture)
    • 1/2 cup shredded mozzarella cheese (for mixing)
  • For the rolls:
    • 6–8 large tortillas or thin crepes
    • 1 cup shredded mozzarella cheese (for topping)
    • 1/2 cup grated Parmesan cheese
  • For garnish:
    • Chopped fresh parsley or cilantro

Instructions:

  1. Prepare the Filling:
    • Heat a skillet over medium heat and add a drizzle of oil.
    • Sauté the onion and garlic until fragrant and soft.
    • Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.
    • Stir in paprika, oregano, salt, and pepper.
    • Once the beef is fully cooked, mix in the cooked rice (if using) and 1/2 cup mozzarella cheese. Set aside.
  2. Assemble the Rolls:
    • Preheat your oven to 375°F (190°C).
    • Lay a tortilla or crepe flat and spoon the beef mixture onto one end.
    • Roll it tightly, like a burrito, and place it seam-side down in a greased baking dish.
    • Repeat with the remaining tortillas or crepes and filling.
  3. Add Cheese Topping:
    • Sprinkle shredded mozzarella and Parmesan cheese generously over the rolls.
  4. Bake:
    • Bake in the preheated oven for 15–20 minutes, or until the cheese is melted and bubbly.
  5. Garnish and Serve:
    • Remove from the oven and sprinkle with chopped parsley or cilantro.
    • Serve hot with a side of dipping sauce (e.g., marinara, sour cream, or gravy).
