Cheesy Beef-Stuffed Rolls
Ingredients:
- For the filling:
- 500g ground beef
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper, to taste
- 1/2 cup cooked rice (optional, for added texture)
- 1/2 cup shredded mozzarella cheese (for mixing)
- For the rolls:
- 6–8 large tortillas or thin crepes
- 1 cup shredded mozzarella cheese (for topping)
- 1/2 cup grated Parmesan cheese
- For garnish:
- Chopped fresh parsley or cilantro
Instructions:
- Prepare the Filling:
- Heat a skillet over medium heat and add a drizzle of oil.
- Sauté the onion and garlic until fragrant and soft.
- Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.
- Stir in paprika, oregano, salt, and pepper.
- Once the beef is fully cooked, mix in the cooked rice (if using) and 1/2 cup mozzarella cheese. Set aside.
- Assemble the Rolls:
- Preheat your oven to 375°F (190°C).
- Lay a tortilla or crepe flat and spoon the beef mixture onto one end.
- Roll it tightly, like a burrito, and place it seam-side down in a greased baking dish.
- Repeat with the remaining tortillas or crepes and filling.
- Add Cheese Topping:
- Sprinkle shredded mozzarella and Parmesan cheese generously over the rolls.
- Bake:
- Bake in the preheated oven for 15–20 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve:
- Remove from the oven and sprinkle with chopped parsley or cilantro.
- Serve hot with a side of dipping sauce (e.g., marinara, sour cream, or gravy).
